Keto/ Vegan Fajitas!

Here is the recipe for these quick ones, they are so easy to make and super saving. You can also make the sweet version by adding a little bit of the sweetener you use.

With these quantities you will get approximately 5, you can double the ingredients and make more.

You can freeze them and when you want to use them, take them out 5 minutes before and that’s it, no need to use the microwave.

Recipe:

You need:

  • 1 cup flax seeds (I used golden).
  • 1 cup of freshly boiled water
  • Pinch of salt.

Procedure:

  1. Grind the flax seeds until a flour is formed.

  2. Then heat the water to boiling point and add it to the flax flour, mix with a spoon until a dough forms and let it stand for a couple of minutes.

  3. Then place it between 2 vegetable papers or butter to knead with a rolling pin/kneading stick. Roll it out until it is very thin and cut. I used a small plate so that they were all the same size, but you can use the lid of a casserole dish or cutter.

  4. Place the tortilla in a non-stick frying pan, over medium-high heat, wait for them to cook well on one side before turning them over (2min approx), then turn them over, wait a few more seconds and that’s it!

  5. If necessary you can use a little olive oil to cook them.
