Keto Quesadillas

Quesadillas Keto

Here is the recipe for these delicious quesadillas! I really like this kind of recipes because they are easy, versatile and as always, you can make them in quantity and freeze them.

As for the fillings, you can use whatever you have and like, I’ll leave you with a Mexican option 🙂

Ingredients (3 servings of 2 quesadillas)

2 eggs
2 egg whites
170 g cream cheese
1 1⁄2 tsp. powdered psyllium husk
1 tbsp. coconut flour or 1 ½ tbsp. almond flour
½ tsp. salt

Instructions

  1. Beat the eggs and egg whites until fluffy (2-3 minutes with a mixer should be enough).
  2. Add the cream cheese and continue beating until the mixture is smooth.
  3. Mix the salt, psyllium and coconut flour together well in a small bowl. Gradually add the flour mixture to the batter while whisking.
  4. When mixed, let it stand for a few minutes. It should be thick like pancake batter. Be patient, if it doesn’t thicken enough, add a little more flour.
  5. They can cook in the oven (medium) with greaseproof paper for 5’on top, or directly in a good frying pan with a little olive oil. Each tortilla should be about 12 cm, 6 in total.

Quesadillas

  1. Place half of the grated cheese on the tortillas.
  2. Add a handful of greens, sprinkle with the remaining cheese and top with another tortilla.
  3. Heat a small non-stick frying pan. Add oil or lard and toast each quesadilla for about one minute on each side. You will know they are ready when the cheese melts.
    Cut the quesadillas into triangles and serve!

Filling: (optional, you can fill with whatever you like)

  • Mexican cheese or another hard cheese of your choice
  • Green leafy vegetables
  • 1 tbsp. olive oil
